House created a century ago, working mainly Pinot Meunier on a green clay terroir. Made exclusively from Pinot Meunier. The vinifications are the least interventionist possible with clear objectives, pure, taut and natural meuniers. With the cuvée "Les Vignes de Mon Village", Cédric Moussé wanted to pay tribute to his father Jean-Marc Moussé, who was mayor of his village for 25 years, and a lover of the Meunier grape. This 100% Meunier is the Champagne of gastronomy par excellence. To fully express itself, it should not be decanted, but served in white wine glasses 5 minutes before tasting; oxygenation is then gentler. The recommended pairing is with unsauced white meat or simply puff pastries.
