Description

This Très vieux Cognac comes from an indivision that was established when the winegrower died several years ago. His widow and children manage the inheritance with care and patience, in memory of this man. One of the grandchildren has taken over the property, which has since become a major Borderies operation. The grandfather's stock, however, is managed separately, and housed in a separate chai in the center of the village of Burie, located in the heart of the Borderies. Since its purchase, it has aged in the chai of Grosperrin in Saintes, on the banks of the Charente. A very slight reduction was made more than five years ago. Old gold cup, amber highlights. On the first nose, the flowery side of Borderies is clearly expressed, with its notes of violet candy, dried flowers, spicy roses. The second nose is deeper, denser, and we distinguish an elegant rancio, not very woody, caused by the oxidation of the fats contained in the alcohol, which time has made noble. The spices are more frank, cigar box, licorice, more "mature". On the palate, the attack is frank, mineral, one is immediately seized by the quality. The development is both powerful and contained, the texture proves oily. The long finish joins the aromas perceived on the nose. Lots of elegance, a beautiful Borderies.
