Very old brandy aged in Limousin oak barrels. The entire vineyard Paul Giraud, or 42 ha, is located in Bouteville, in the heart of the Grande Champagne. The Giraud family relies on ancestral know-how (ploughing the soil, organic fertilizers, integrated pest management, manual harvesting for 2/3 of the vineyard, distillation in small 14hl and 18hl stills, particularly humid cellars, ...) to produce exceptional Cognacs, mono-cru and mono-année, of great finesse and aromatic intensity. Héritage is the oldest Cognac produced by Domaine. This very old eau de vie has aged in Limousin oak barrels for a minimum of 60 years. It has an old gold and amber color with copper highlights. The nose is characteristic of Très vieux Cognacs, with an intense aroma of rancio, clove, sandalwood, red pepper and vanilla. The palate is rich and complex, with initial flavors of walnut, tiramisu, coffee and speculoos. The rancio soon returns, accompanied by notes of plum liqueur, leather cream and precious woods. The finish is soft, fresh and savory, on blond tobacco, blackberry marmalade and orange blossom. This Cognac Héritage is a fleshy, voluptuous and elegant eau de vie. A pâté en croûte of duck, figs and foie gras will enhance its rancio and delicacy. And for cheese lovers, try a surprising pairing with Roquefort or Fourme d'Ambert... a real treat!
